To obtain an Amontillado like Viejisimo, the ageing period must be at least 25 years. This one is produced from a Solera started in 1922 and therefore also contains ancestral wines. It has beautiful notes of roasted peach, fine oxidation and a slight caramelisation of the bouquet. Very nice, fat, suave, unctuous, but dry palate.
