Technique

Viticulture

This is the second wine of Ch. Palmer. Average age of the vineyard: 40 years. Planting density: 10,000 vines per hectare. Terroir of fine, sometimes medium gravel, Günzian Garonne, of good depth on a limestone base, between 5 and 18 metres in altitude.

Oenology

Traditional vinification in stainless steel truncated cone-shaped vats with regulated temperatures, carried out by grape variety and by plot. Aging of the wines in barrels as soon as the malolactic fermentation is complete, fining with fresh egg white, racking at the end by gravity. Aged for 16 to 17 months, of which 25 to 30% in new barrels.
